Baldwin's Farmhouse Ice cream
how it's made
With so many different types of ice cream on the market, Baldwin’s Ice Cream is out on its own!
It is traditionally made in small batches using the crème anglaise method. We take fresh milk from our own dairy herd, which means the milk is not pasteurised or homogenised. We then combine this fresh milk with egg yolk, sugars and whatever flavour needed. Fresh cream, which has been separated during the morning milking that day is then added to the batch.
All these ingredients are mixed and put into our specialised ice cream making machine, where they are blended and then pasteurised, this unique process makes sure the taste and natural goodness from the quality ingredients is not lost. The luxurious creamy mixture is then frozen at -12 to-14 degrees. At this point we package the ice cream and place in the deep freeze.

Our Ingredients
At Baldwin’s, we take pride in only using quality natural ingredients.
Firstly, fresh milk and cream comes from the Baldwin dairy cows, giving our ice cream an unrivalled taste. We buy as many ingredients as we can in Ireland. We use free range eggs from Clonarn Eggs, Co. Meath and our strawberries come from Glen Fruits, Dungarvan, Co. Waterford.
Obviously, sugar has to be imported along with other core ingredients, but we buy fair trade products where possible.
Other ingredients are sourced from the finest regions around the globe. Our vanilla pods come from Madagascar and Reunion in southern Africa. A lot of fruit and nuts we use come from the Piemonte region in Italy and Loire region in France.
No artificial additives or preservatives are ever used, making it one of the finest naturally made ice creams on the market.
